You are also among those for whom the option omelette it only clicks when you have some eggs a little later in the day and a leftover of cooked vegetables to take out?
In fact, the omelette is like pasta: you can put whatever you like or what is there, so much so that not infrequently unpublished recipes come out of my pans that I will never repeat (like that time I made one of gnocchi with 4 cheeses left over from dinner the night before).
There are, of course, classic recipes such as asparagus or pasta.
And great evergreens of (my) spring / summer cuisine that I am going to list.
With wild herbs

By now, you have no more excuses: field herbs are also found in supermarkets, not to mention in traditional markets and farmers markets, in organic shops and sufficiently supplied gardeners.
From nettle to borage, from the classic rocket to watercress, the slightly bitter or pungent taste can be sweetened by combining chard of all colors or strengthened with herbs: lemon balm, mint, chives, even coriander for those who love its exotic touch.
Well washed, blanch them for a few moments, sauté them in a pan with garlic and oil and then with eggs which, in this case, I like to perfume with nutmeg.
With fresh bulbs

White and red onions and spring onions, shallots, leeks (even if they are about to hibernate) and my favorite, fresh garlic, are always a top ingredient.
Thinly sliced and left to dry, it is better that they do not take too much color (during the cooking of the omelette, those in contact with the bottom of the pan will brown enough), so as not to develop bitter hints but only their characteristic sweetness (yes, even the garlic can be sweet if well treated).
The addition, recalling French onion soups, can be a generous grating of gruyère, but also fontina, asiago, simple parmesan or parmesan.
With spring vegetables

The aforementioned asparagus, artichokes, new peas, broad beans, green beans, snow peas, courgettes and their flowers: for your green omelettes, cook them al dente (better by steaming them, so they don't get soaked) or directly in a pan (the flowers just a few moments).
If you are in the mood for a rich dish, try mixing them with a good diced ham or thin slices of bacon made crispy in a pan, before pouring in the egg and vegetable mixture.
Of course, the addition of a fragrant bulb like those in the previous point is always welcome.
With peppers

This is a must for the coming summer: the pairing of peppers and eggs is one of the best.
Use them in two or three colors, cut into strips and sautéed with garlic or onion. Or, bake them whole, peel them, divide them into layers and add them to the eggs. Again: try making a pepperoni omelette, which with its sweet and sour notes will give you an unusual, very good dish.
And then, try the friggitelli, the sweet green chillies which, as the name implies, must first be fried, whole, in plenty of hot oil, then drained and dried carefully, salted and added to your mixture together - why not - a a hint of hot pepper.
With potatoes

Here we are in the world of Spanish tortilla. Everyone has their own good recipe, which I certainly don't want to compete with. So, mine remains a humble omelette with potatoes and onions.
You can make it with boiled potatoes, sliced and sautéed in a pan with the onion, or with a diced one cooked directly with oil or butter before pouring over all the egg mixture.
Yes, I said butter. If I generally like omelettes cooked in oil, I like the potato omelette with butter: since it has nothing to do with the Spanish tortilla?
With bread

Poor, very poor, but very good. Take one or more slices of homemade bread, even a little stale. Rub them with garlic. Cut them into cubes. Fry them in extra virgin olive oil, drain, add salt and pepper.
Beat the eggs with some chopped herbs to taste (thyme, marjoram, rosemary, sage). Mix the garlic croutons. Do you want to overdo it? Add a frayed mozzarella with your hands. Pour into a pan and brown the omelette.
Then, tell me: is there something simpler and better?
