We can also try to pretend nothing but the slap has arrived. We can pretend that the Pizza, the most loved dish on Italian tables, has remained the same as always, the humble disc of leavened dough topped with tomato and mozzarella that can be eaten for a few euros in Neapolitan pizzerias.
We can try to ignore it, but the two dishes with which the TV feeds us, as the first course the programs with the chefs and as the second the programs on the chefs also involve the pizza chefs, humble extras yesterday today playful and elegant men, stars with tufts and tattoos, bangs and rolled up sleeves.
We can refuse to admit that everything has changed with the advent of gourmet pizza, or “tasting” pizza: naturally leavened pizza, with stone-ground flours, with a higher thickness and a different texture, finally with the classic cut into wedges.
Today the quality is different, certainly better, but above all the prices, much higher than the Neapolitan average.
To give you an idea, we have gathered the 20 pizzas which, until proven otherwise, are the most expensive in Italy.
