We can also try to pretend nothing but the slap has arrived. We can pretend that the Pizza, the most loved dish on Italian tables, has remained the same as always, the humble disc of leavened dough topped with tomato and mozzarella that can be eaten for a few euros in Neapolitan pizzerias.

The Alajmo galaxy bistro puts on its menu the three P's at the base of Italian cuisine (it's called ABC for this reason) or Bread, Pasta and Pizza done to perfection, with fragrant leavened products and the same ingredients as the starred restaurant on the first floor.

Rustic bistro in a renovated farmhouse where a Roman-style focaccia, subtle but without exaggerating, is the backdrop to an infinite series of combinations made with quality ingredients.

Emerging leavened guru, Patrick Ricci experiments in his pizzeria starting from ancient grains, stone-ground flours and leavening from 24 to 48 hours. The margherita with crushed tomato is recommended as tradition dictates.

via Solferino, 33 - Milan

Cocktail bar - pizzeria with chef Andrea Berton among the members and a menu of well-kept pizzas, enriched with quality ingredients and references to the Neapolitan style.

Highest Price: 16 EURO - Eel pizza baked in foil (turnip tops and smoked provola).
NB: the pizzas are small in size and there is an additional 'topping' system for a fee (from 2 euros for onions to 5 euros for cooked and tuna belly, passing through 4 euros for capers and Taggiasca olives).

The reign of Marzia Buzzanca born with tenacity and constancy after the earthquake. It was Gianni Frasi from Torrefazione Jamaica who introduced her to Simone Padoan, since then the pizza in the shadow of the Gran Sasso has never been the same.

Pizzaiolo-owner arrived from Puglia, after opening a café he returned to pizza and today he runs a nice place in the center of the Piedmontese town. Bread loaves are also highly recommended.

14. QBIO - Gourmet pizza
P.le della Vittoria, 16 - Forlì

After a few years from Spaccio, the pizzeria of the San Patrignano community, Ivan Signoretti opened this place with Jonathan Trombini. The excellent use of mother yeast, the lightness and digestibility of the doughs and the alternative pizzas such as Pura & Vegan quickly decreed its success, leading to a second opening in Cesena.

Emerging restaurant, with an extensive menu dedicated to pizza. There are many versions (classic, special, light) with unique proposals, 3L pizza that integrates the ingredients into the dough, and Ciambella pizza that recalls a baguette.

Highest Price: 20 EURO - Pizza La Ciambella (Donut-shaped baguette filled with mozzarella and parmesan, garnished at the end of cooking with mixed salad, datterino tomatoes, buffalo mozzarella, Parma ham and parmesan flakes).
12. RESTAURANT DELL’ANGOLO - Classic pizza
via Villoresi 71/73 - Vittuone (MI)

Giuseppe Rizzo, self-taught and then a disciple of Simone Padoan, revolutionized his parents' village trattoria by transforming it into a restaurant-pizzeria, a treasure chest where all types of leavened products (pizzas, Ligurian focaccia, panettone, Venetian, etc …) reign supreme today.

Focaccia branded Fulvio Pierangelini, a chef adored since the time of Gambero Rosso di San Vincenzo, and prepared every day by Nazzareno Graziano Menghini, executive chef of the refined Roman hotel.

Unusual formula, Salamensa is both a bar open for breakfast and a bistro for late risers, with the laboratory for leavened products placed in the center of the room. The pizza chef Luca Giordano serves the pizza leavened 30/36 hours on hot cast iron bases to retain the heat.

A tradition, that of the panuozzo, that the Mascolo family have been carrying on since the 1970s, since they have been baking Neapolitan leavened products with the double cooking effigy of street food. The pizzas, inspired by the Sorrento tradition of pizza by the meter, are served here with a particular unit of measurement: the kilo.

Milan has another Neapolitan-inspired pizzeria, faithful to the most current quality standards: ground flour and stone, long leavening, many Slow Food presidia among the raw materials. The "Gourmet Extreme" line of Daisies includes the addition of raw ingredients.

Renato Bosco, pizza researcher, often protagonist on Dissapore, moves with identical skill between five different types of pizzas: classic, Roman double crunch, by the slice, by the meter, to finally arrive at gourmet pizza (air of bread).

Simone Padoan does not need long introductions, a pizza maker who is the symbol of gourmet pizza cut into wedges, driven by continuous research on doughs and by a care of the ingredients comparable to that of a starred restaurant.
