Video: Single but not too much: what do you eat when you are alone?

For a period of my life I traveled a lot, slept at least 4 nights out of 7 in a hotel, traveled far and wide, tried restaurants, tasted products, visited producers.
And all this I did alone.
It wasn't traveling that strangely me, I do it willingly, but the thing I was least comfortable with was eating alone.
In doing so, I discovered that, especially for those who prepare the dreaded dinner alone, eating gives its joys even in front of a deserted table.
But what is cooked in these cases of misanthropy or necessary isolation? Italians, people with recidivist spaghetti, have a tendency to limit their inventiveness to a dish of plain pasta, but in our opinion it can be done better.
My solo dinner involves:
Hamburger
Singleness can also be cool and therefore don't forget the gastromode. In times when everything is transformed into hamburgers and meatballs, we can go at full speed.
Do it with heifer, with cod, with tuna, with roast beef from the day before, even with tofu or legumes.
Omelette
Rude in his manner but sincere in substance, he is more or less the Callahan of the pan. They range from edible flowers and courgettes in spring, to eggplants in summer, potatoes, mushrooms and artichokes to close the cycle.
There are those who love it even with leftover pasta but be careful: it is a sure shock if you don't belong to the category of sgamati at the table.
Noodles
In times of Bric dictatorship, our bachelors pantry (occasional and otherwise) must also make an exotic turn.
Arm yourself with curiosity and steal your squeaky wrinkled nose, on the one hand, and mummy's juices, on the other: it's time to try something new. Rice noodles are a godsend if you cook them with zucchini, surimi and soy sauce.
Risotto
Getting to grips with the kitchen alone means distancing oneself from the maternal kitchen, but also knowing how to deal with a dose of healthy nostalgia when the time comes. Risottos and soups are the embodiment of this.
With pumpkin and taleggio, risotto is a racy cuddle. With cuttlefish ink and a spoonful of pesto it becomes refined. With black cabbage and pecorino romano, a true enjoyment of a lone wolf, intense and sepulchral.
If you are from the party that "Pasta is fine, but Italy is not just pizza, spaghetti and mandolin", tell us which is the right menu to enjoy in front of a table set according to you, with no one around.
It is also worth cooking something hideous and rejecting the dish with strong self-reproach.

A rigorous but not too much pasta
I do not make the mouth a cul di gallina if the pasta increases by 10 cents. Not even if it costs 5 whole Europeans a kilo. Having found the Rigorosa at 2-and-10 € a half kilo on the supermarket counters, let's say “high cut”, I thought it should be tasted. I have told it elsewhere, collecting comments on the characteristics, but above all on the […]

The Newsweek judges seem to have fled from a rehab against the advice of the medical staff. Yet they are our superheroes, chefs who want to make the world a better place through food. But let's go in order. The American weekly gathered 53 chefs with an impeccable pedigree to compile the list of 101 places […]
