Bad news for the purists of Pizza cooked in the traditional way, in the classic wood oven: A new study conducted by researchers from 7 different countries states that the emissions of wood-fired ovens damage the environment.
The surveys were carried out in Brazil, precisely a St. Paul, a metropolitan reality where 1 million wood-fired pizzas are baked every day.
The team of scientists noted inconsistencies: although the city has reduced the daily smog threshold and adopted measures such as biofuels, pollution parameters do not drop.
The fault seems to be precisely of pizzerias and steakhouses: cooking with wood has spread like wildfire in recent years. Eucalyptus trees are used to obtain the necessary timber: every year, 307,000 tons of wood are consumed for this purpose in Brazil, favoring deforestation.
Wood produces many secondary pollutants that are dangerous to the atmosphere, such as ozone and aerosol other gases in the form of aerosol.
In December 2015 Antonio Falcone, mayor of San Vitaliano, a town of six thousand souls in the province of Naples in the middle of the Land of Fires, had asked for the pizzas cooked in a wood oven asking locals across the country to install expensive blast chillers to reduce emissions.
