In the interview given to the American Huffington Post Massimo Bottura, chef of the Osteria Francescana in Modena, the first restaurant in the world according to the 50 Best Restaurants, spoke about Food for Soul, a non-profit organization with which it is committed to combating waste food and hunger.
As well as the imminent opening, with the help of the Gastromotiva association, of a refectory in Rua da Lapa 108, in Rio de Janeiro, Brazil, where the 31st Olympic Games are about to begin.
Task of the Gastromotive Refectory, natural evolution of the Ambrosiano Refectory opened in Milan on the occasion of Expo 2015, it will be to recover the food that would otherwise be wasted in the Olympic Village, and to become, after the conclusion of the Olympics, a solid point of reference for the needy in the area.


Lending a hand will be many chefs of international rank involved in Bottura's enthusiasm, among others: Albert Adria, Alain Ducasse, Virgilio Martinez, Rodolfo Guzman, Mitsuaru Tsumura, Mauro Colagreco, Helena Rizzo, Carlos Garcìa, Enrique Olvera, Joan Roca, Rafa Costa and Silva.
The canteen, designed pro bono by the Metro Architecture studio, is located in a plot made available by the city of Rio de Janeiro, artists and designers such as Vik Muniz, the Campana brothers and Maneco Quinderé are working to create interiors and furnishing accessories.
"We are constantly looking for partners who share our values and can support projects like these in Italy and abroad," said Bottura, who can take this into account.
