Thus, for the usual Tasting test before Easter, we thought about the doves industrialists that even fine connoisseurs, after all, could buy by paying for them between 8 and 13 euros.
To help us in the judgment, we used the same evaluation form as the jurors of Regina Colomba, the main Italian event on Easter doves., Although in that case the leavened products were only artisanal.
6. TRUNKS
We tasted, tasted again and, after a couple of days, tasted the dessert again so as not to be reckless. But the brioche flavor of the Bauli dove, the famous breakfast leavened industry, was always in its place.
We do not know if it is a matter of production plants or a precise choice, but the identity of the brioche is evident even looking at this dove, with a modest presence of candied fruit, slightly chewy.
Equally evident are the leavening problems, with the dough thickened in the upper part of the cake, slightly flattened. The price, at least, is low.

5. BALOCCO
The plastic wrapping is quite cloying, like a doll's house, while the term "The original" flaunted on the label sounds extravagant since in the original recipe the raisins, included in the dessert, are not included.
Extracted from the package, the Colomba Balocco, a famous company from Fossano (CN), is not very inviting in the "crust" stingy with sugar, even if when cut things improve.
Gummy candies and not suitable for this price range, aggressive scent, but at least the spinning, or the stringy effect of the dough visible despite cooking, is discreet and the overall flavor discreet.

4. PALUANI
The cheapest in this intermediate price range between the low cost doves of supermarkets and the artisanal ones baked by pastry shops, does not aspire to the primacy for aromas and tactile sensations.
Abundant (the fact that it weighs one and a half kilograms helps to keep the price low), with somewhat coarse features, it proves to be well alveolate and without aromatic imbalances. Above all, it tastes like a dove, unlike the previous two.
Just a note: was the candied fruit candied? Because it resembles sweetened orange peel, perhaps the result of hasty work.

3. VERGANS
Balanced in the dough, dry but not dry, the spinning done correctly gives a perfect consistency.
Too bad for the limited cell structure, because even the candied fruit are soft and tasty, and the external appearance is really pleasant. How can we forget then that Vergani also produces Colomba from Conad's Sapori e Dintorni line, sold at a lower price.

2. GALUP
It could have been the best purchase of this Tasting Test. Instead Galup, a historic company from Pinerolo (TO), slipped on the banana peel of the glaze, losing the first place we thought we would assign it.
Vintage, almost austere packaging, the highest price of the lot and the white, red and green colored wording: "40 hours of slow leavening, three dough stages". But, as mentioned, the glaze, well divided between almonds and sugar, gave way slightly, with a relapse (but the correct term would be "fall") also on the internal aspect.
A skein of sugar concentrates on the bottom of the dove, so well alveolate and fragrant that it makes you think of an artisanal dessert. In the mouth it does not leave many memories while the touch is perfect and, above all, closing the eyes so as not to think about what we have in front of us, tearing a piece and chewing it is just a good dove that comes to mind.
The ingredients list is the best of the lot: type "0" soft wheat flour, candied orange peel (18%), sugar (11%), butter (9.5%), category A fresh egg yolk (7%), emulsifiers (mono and diglycerides of fatty acids), natural yeast (2%), whole milk (1%), salt, flavorings.

1. THREE MARIES
The softness of the candied fruit, irregular and plentiful, in addition to the good almond, which still remains crunchy, are the two main factors that make the Tre Marie colomba prevail. With the exception of a slight dent, the appearance is harmonious.
A little of the scent of the glaze, reminiscent of a very sweet amaretto, invades the already pleasantly orange paste. Excellent spinning, without resulting in the marsh mallow softness in fashion among many artisan leavened products.
Beautiful, and at the right price.
