We now know everything about foraging, the search for herbs, mushrooms and wild roots in uncultivated nature. It was among our 10 words to know to be gastronomically relevant in 2015, and for some months in Italy there have even been courses.

Very well, it will come in handy shortly, when we collect salad, tomatoes, peppers and more in the supermarket garden before going to the cashier.

What are we talking about? Of the first vertical micro-farm for vegetables that appeared a few days ago in some points of sale of the German supermarket chain Metro.

It's called Krauter-Garten, it was developed by the startup Infarm, which specializes in vegetable gardens for supermarkets.

The appearance of Krauter-Garten is reminiscent of both a small greenhouse and a vertical vegetable garden; thanks to a system of led lights regulated ad hoc for plant health, and to the hydroculture method (a cultivation technique out of the ground, which replaces the earth with a clayey compound irrigated by a solution rich in mineral salts), for now it is possible to obtain vegetables, medicinal and garden plants.

The larger vegetables will also arrive shortly, from tomatoes to peppers.

This is an experimental project that the German startup intends to expand to hotels and restaurants in the coming months with the aim of "reducing waste" and offering "very fresh" products.
