Chocolate bars with almonds and goat cheese

Ingrediants:

- 4 tablespoons of softened butter, plus 1 teaspoon;

- 25 g of sliced almonds;

- a few pinches of salt;

- 100 g of almond butter;

- 2 tablespoons of softened goat cheese;

- 55 g of almond flour;

- 180 g of sugar

- 125 g of dark chocolate (70% cocoa) coarsely chopped

1. Line a 13 cm square pan. with kitchen paper.

2. Melt a teaspoon of butter in a small skillet over medium heat. Add the almonds and a pinch of salt. Cook, stirring occasionally, until the almonds are golden, about 5 minutes. Pour into a bowl.

3. Using an electric blender, beat the almond butter (preferably homemade, otherwise you can find it everywhere, including Amazon) and the goat cheese. Combine the almond flour and continue whisking. Stop the blender and scrape the sides well. Add sugar, a pinch of salt and 4 tablespoons of butter and whisk until the mixture is smooth and uniform. Scrape the sides again and whisk once more to better mix all the ingredients. Spread the almond butter mixture into a pan.

4. Bring a pot of water to a boil. Place the chocolate in a heat resistant bowl and cook in a double boiler while stirring until completely melted. Scrape the chocolate and pour it into the pan where the almond butter mixture is and distribute evenly. Also combine the sliced almonds. Cover with aluminum foil and leave to cool completely to room temperature. The dough must be solid. Cut into 18 bars.
