TO Piozzo they invented the Pizza to the boiled of Carrù. They even talked about it to Melaverde, and we know that when something ends up on TV it is elected a super pop stunt that deserves our attention. And so here we are, studying the creation of chef Bruno Picco of the "Perlage" restaurant in Piozzo, who explains that "The goal is: to innovate tradition in order to never lose it".
The occasion is the next Fat Ox Fair, for which the chef wanted to invent a novelty (which will be available throughout the winter season) to serve the now old and somewhat tired classic boiled meat. Bruno Picco is not new to creating pizzas with local ingredients: some time ago, the local media recalled, he also invented pizza with pumpkin, the typical product of Piozzo par excellence.
And so we brought together the North and South of Italy, in a marriage of love that we imagine very successful. Or not? In fact, it is not that we imagine it very much, this mixture on which seven cuts of meat and the three typical accompanying sauces, bagnet verd, bagnet rus and cugnà are placed. So, to the nose, it seems a bit of a mess. But on the other hand, my husband, who is one of the big fans of pizza that I call "svuotafrigo", has always tried to teach me that the beauty of pizza is that you can put whatever you want into it. I guess, in the end, maybe he is right.
