She is the daughter of the Portuguese ambassador to Africa. He, an Italian agronomist. Together, they produce one of the best chocolates in the world.

So good that even the New York Times took care of it, writing a more than flattering opinion on their products, summed up by the phrase “put your muzzle on if you go to Corallo's: that chocolate is dangerous”.

And "that chocolate" is not found in refined single-brand stores opened in the major historical centers or in the busiest airports, but in an anonymous, unpretentious bar in Praca do Principe Real, Lisbon.

This is the kingdom of Bettina Corallo, who with her ex-husband Claudio started the production of the unique chocolate in the world.

Claudio, in fact, with his diploma as an agronomist, managed to find in Sao Tome and Principe, a former Portuguese colony in the sea surrounding the African continent, some cocoa plants that were exported there from Latin America in the nineteenth century. the whole production process has been modernized, starting with the selection of suitable fruits, based on the degree of ripeness, also thinking about fermentation under banana leaves for a period of time twice as long as other producers.

This is how Corallo chocolate was born, a chocolate produced from soils and plants, rather than from seeds or, like most of today's production, from semi-finished products such as cocoa paste.

"Ours was a tropical dream born between the daughter of the Portuguese ambassador and an agronomist of the Italian cooperation," says Bettina proudly.

And now, the dream of Bettina and Claudio, despite their separation, continues to live among the cocoa beans selected by him and the processing carried out by her in the small bar in Lisbon.

Together, they continue to produce one of the best chocolates in the world.
