"Training is the watchword", says the president of the Consortium of Mozzarella di Bufala Campana DOP, Domenico Raimondo. And even during a pandemic, the concept remains valid: for the fourth edition, the course it turns out in fact sold out.
Precisely on 3 December the course of the Dairy Training School of the Consortium for the Protection of Mozzarella di Bufala Campana Dop began, in collaboration with the "FormaMentis" group, to become cheesemakers. Due to the anti-contagion restrictions from Covid-19, it was decided to hold the course for the first time online, but this did not stop students from enrolling. On the contrary, the ceiling foreseen by the course was even reached without problems, 20 students, by people who come from both Italy and abroad.
There is even, among the 2020 members, those who signed up since Israel and from India. Two also women who have chosen to take the course and dream of a future as a “dairyman” in the dairies of the supply chain. Other students come from Rome, Sanremo, Bari, Naples and different areas of Campania.
Pupils will face 500 hours of lessons, between notions of chemistry, microbiology, legislation and a lot of practice in the field. In fact, the course includes an extensive phase of internship in the companies belonging to the Consortium. So far 38 young people have graduated from the School, in possession of the official qualification of "dairy processing operator". The placement of the course is very high, around 93% of the students immediately find a job or open your own business in the sector.

The accreditation of the Consortium for the Protection of Mozzarella di Bufala Campana PDO in the regional training system has filled a gap in the South - says the director of the Consortium, Pier Maria Saccani - and is offering social and employment opportunities to many young people within a dynamic and increasingly young and pink supply chain. 39% of the over 11,000 employees in the sector are under 32, while 30% are women. Young people, training, research and technological innovation are precisely the strategic assets in which to invest again ».
