Grilled fruit? For us it is a categorical yes. For many reasons: grilling fruit does not affect its flavor and nutritional properties at all, rather it accentuates its sweetness, it opens up a whole new world to enrich a summer lunch with salads and skewers, it brings originality to the table. Now that we are practically in summer we are dedicated to seasonal fruit, and we are sure to amaze you with at least some of the proposals we will make for you.
Before suggesting you 8 fruits to grill, we just give you a couple of tips on how to proceed since some rules apply regardless of the fruit in question. Do not cut the fruit into pieces that are too small but not into pieces that are too thin; try to pat the particularly juicy fruits well; grill them trying to brush on the surface or sugar or melted butter; combine grilled fruit with both sweet (creams and ice cream) and savory (salad, cheeses, white meat and fish, pasta and rice).
Peaches
Nectarines are the variety that best lends itself to this preparation: compact pulp, drier than average, thick and resistant skin. Just cut them in half and stone them, keeping the peel, and place them on the well-heated grill … then accompany them with ice cream, fruit coulis, and nuts. For savory ideas, you should know that fishing goes great with raw tuna and a salad with feta.
Watermelon
Grilled watermelon will be the revelation of your summer: fun to make, it goes great in a salad with rocket and feta, you can put it on a stick and let the little ones eat it. you can grill it in slices with a lot of zest, or in cubes of pulp to then insert it in a fruit salad or in a savory dish. Apricots
Combine grilled apricots, robiola or quark, rosemary and almonds and you will get a truly unbeatable appetizer … simple but impressive, to be paired with white wines and bubbles for an unforgettable and elegant summer sunset. Take care to choose apricots that are certainly ripe, but not too soft.
Pineapple
The pineapple, among those present, is the fruit that best lends itself to a beautifully spicy combination. Turmeric, chilli, curry, cinnamon go well with him … in short, he is really versatile and you can easily accompany him with grilled chicken, turkey, or even just whipped cream. P.s. we know that pineapples are not exactly summery, but nowadays they can always be found.
Melon
If pure melon is amazing with raw ham, think about what level of goodness it can reach once grilled. Cured meats, tartare, white meat, sweet and sour cakes, even aged cheeses… enough with the monopoly of ham! Basil is a particularly suitable aromatic herb with grilled melon.
Bananas (or plantains)
Whole or grilled banana is a delicacy that is not easy to combine, but it is worth tasting. Grill it whole or cut it in half lengthwise, enrich it with cinnamon and hazelnuts, and serve with a salted caramel sauce. You can also use it as a base for the famous banana split ice cream, with whipped cream, creams and icing.
Apples
Ok, apples are not exactly in the summer season (or rather, some varieties are) but they are available all year round. And after proving that they are perfect in the oven, in a pan, fried and roasted, we will show you that they are also perfect on the grill. Slices thin but not too thin, first brushed with melted butter or diluted honey, to accompany meats and salads in this case as well. To associate them with dessert, you are spoiled for choice.
Figs
From August you can see how good grilled figs are: the part in contact with the heat caramelises, releasing a pleasant bitter scent. Eat them over a focaccia, or with cold cuts and cheeses.
